Mixture of alluvial soil from the Maipo River with colluvium from the Andes Mountains; this is very important for the growth of roots in depth.
Climate
At the end of the season the grapes ripen evenly, reaching temperatures as low as 4 degrees Celsius, which is very high in the center of Santiago due to the strong thermal oscillation.
Harvesting and winemaking
The grape harvest takes place between the third and fourth week of March. The grapes are selected upon arrival at the winery and fermented in cement tanks. Fermentation occurs naturally with ambient yeasts; pump-overs are determined by daily tasting.
Aging and storage
The wine is aged in 3,000-liter Austrian vats. No chemicals are added, only sulfur dioxide before bottling. The aging time is determined by tasting.
Bottle
It is kept in the bottle for a year before being released to the market.
