Travignoli Chianti Governo DOCG wine is produced in the northeastern hills of Chianti, a few kilometers from the city of Florence. Located in the Rufina area, the vines, planted in calcareous and clay soils, enjoy excellent southern exposure and an altitude between 250 and 400 meters above sea level. After the harvest, which takes place during the first half of October, the grapes are transported to the winery where fermentation occurs. Fermentation takes place in stainless steel at a controlled temperature between 26 and 28°C for 10 days. Some bunches are left to dry on bamboo racks and added to the fermented wine. This is followed by 9 months of aging in oak. Ruby red in color, it presents aromas of ripe red fruits such as cherry and plum, followed by a light roasted note and hints of coffee. The finish is full and spicy, resulting in a flavorful, compact wine with excellent persistence and smooth tannins. This wine is ideal when paired with roasts and grilled meats; it is the right choice for regional and game cuisine.
