Winemaking
Fermentation in new French oak barrels, 225 to 500 liters; 10-30% whole cluster fermentation. Fermentation lasts approximately 17-28 days, with manual pump-overs, and a total maceration time of 25-38 days. Aged for 15-18 months in first, second, and third-use French oak barrels.
