Tasting notes

Deep, intense ruby ​​red. A very expressive nose, fruity, spicy, and fresh. Prominent notes of red and black cherry, spices such as black pepper, bay leaf, clove, and vanilla. Immediately following, delicate floral notes like lavender and violets subtly emerge, adding great complexity to this captivating nose. On the palate, it is fresh and juicy. It is a well-structured wine with firm, silky tannins. This blended wine offers distinct layers of flavors: blackberry, cassis, pepper, and dill. It is a long, vibrant wine with a very pleasant finish.

Cask

The grapes were hand-harvested in 13-kilo crates and sorted on a selection table. They then underwent pre-fermentation maceration at 10°C for 96 hours. Following alcoholic fermentation (between 26° and 28°C), a post-fermentation maceration of approximately 12 days was carried out. Finally, the wine was transferred to barrels to begin aging, where malolactic fermentation also took place. Aging: 14 months in French oak barrels (20% new).

It pairs perfectly with Patagonian lamb, chops with mint and rosemary, roast beef with herbs and merquén, or tuna with fine herbs.
