Tasting Notes

Aromas: Soft, inviting, dry, and autumnal. Sweet stewed fruits (apricot preserves), ripe autumn apples, and rich berries. Then, toasted nuts: hazelnut, walnut. Scented wood as well: dried tea leaves, freshly cut pine resin. The fruits soften, revealing a rich vanilla and caramel over chocolate and toffee. This softness is finely balanced by a subtle cereal note; neither overwhelming nor cloying. A touch of water brings back the luscious fruit: blackberries, pears in syrup. Vanilla and polished wood also emerge.

Appearance: Deep amber; more attractive, good texture.

Palate: Firm to full. Again dry and sweet, gently dominated by nuts, dark caramel, and soft mint, before the fruits return as rhubarb and apple juice. It deepens and coats the mouth; a hint of almond biscuit, then woody, slightly spicy. Late dryness with a rich, silky cocoa bitterness, growing spice. The fruits darken and run sweetly underneath. The water cools things down; softer and less rich now, dominated by sweet fruit. Very subtle notes of peppermint caramel and licorice.

Finish: The sweetness gently introduces a longer, drier oak note. Freshness of fruit compote. Smoky wood smoke spiced with subtle black pepper.
