"Tayu, "our" in Mapudungun, celebrates the indigenous roots of Chile through an honest collaboration between Viña San Pedro and the Mapuche community of Buchahueico, ancestral protectors of nature and intimate connoisseurs of the soils of Malleco.
This Pinot Noir seeks to be a true representative of the Valley, an unexplored origin for viticulture that is beginning to see its first exponents, showing its full potential."
Tasting notes
With great character and identity, it first shows local herbs such as pennyroyal and paico, matico, followed by acidic red fruit such as cherry and raspberries, ending with earthy notes reminiscent of grilled mushrooms.
It is juicy, again with red fruit, very fresh, with a sharp and vibrant acidity showing the effect of the granitic soil along with a firm texture giving it strength and a persistent finish."
Cask
The wine was aged in the different vessels for 10 months. The final blend was 34% concrete vat + 38% untoasted foudre + 28% used barrel.

Cannelloni filled with spinach, ricotta and walnuts, ravioli filled with pumpkin and lavender, mushroom risotto, hominy stew, sesame-seared tuna with pea puree."
