Nestled at the foot of the mountains in the Cachapoal Valley of the Andes, it's impossible to resist the captivating beauty and sheer power of this imposing mountain range. One of the brightest stars is Altair, especially visible in August and September. Inspired by the stars, we decided to plant our vines in the Cachapoal Valley, even higher up the foothills. This is an area where the terroir is shaped by volcanic eruptions and violent earthquakes dating back millions of years, where the sun shines a little brighter and the cool nighttime temperatures yield grapes with a higher concentration of fruit and exquisite tannins. This wine is composed of 95% Cabernet Sauvignon, 1% Syrah, 2% Carmenère, and 2% Cabernet Franc.

Tasting notes

Intense aromas of fresh red fruits like cherries mixed with a subtle note of wood perfectly integrated into the wine. Good acidity, with a concentrated palate and a good balance between alcohol, sweetness, and tannins. Smooth texture with a long finish.

Cask

The aging process lasted 22 months, the first 16 months in 225-liter French oak barrels (50% new, 35% second or older) and 15% in foudres. For the last 6 months, after blending, the wine rested entirely in 2000-liter foudres.

Pairing

Ideal to accompany red meats with a good % of fat, and medium-high seasoning, such as veal loin of beef or lamb, as well as game birds such as duck. mature cheeses. Suggestion of steak eye with creamy truffled potato and wild mushroom sauce.
