Tasting notes

Enclave is a deep, dark red wine with aromas of red fruits like plum and cherry, with hints of blackcurrant, white pepper, damp earth, and some dark fruit. It has a very interesting aromatic complexity. On the palate, it is an elegant wine with good structure, firm yet silky tannins, and a long finish. This blended wine offers distinct layers of flavor. The firm tannins of Cabernet Sauvignon and Petit Verdot intertwine with the smoothness and complexity of Carmenere and the elegance of Cabernet Franc. This blend gives Enclave a high aging potential of 10-15 years. / Vertex is a deep red color with violet hues. On the nose, it presents notes of dark fruits like blackberries and berries, mixed with black pepper, damp earth, hints of native forest, some graphite, and soft spices. It is a wine with a firm structure on the palate, silky tannins, and flavors of black fruit and spices. Its medium-high acidity provides balance and a persistent finish. / Obliqua is a deep red color with violet hues. The nose offers notes of fresh red fruits like raspberry, mingled with spices and hints of cedar. On the palate, it is a wine with a firm structure, well-defined tannins, and a chalky sensation typical of stony soils. It is very elegant, with excellent acidity, balanced on the palate, and persistent. This Carménère reflects the high-altitude vineyards of Apalta, making it an atypical wine among Chilean Carménère examples. The altitude and mountain planting result in a wine that is vibrant and intense on the palate. In short, a Carménère meant for aging. Pangea has an intense, dark purplish-red color, with rich and complex aromas that reflect everything a Syrah from the Apalta Valley is, with notes of black fruit mingling with aromas of raspberry and spices like black pepper, along with mineral notes such as graphite, very classic of this terroir of granitic soils with high quartz content. Ripe and firm tannins, a wine with great structure and acidity; decanting is recommended. This wine possesses an exceptional combination of concentration, flavors, and aromas. Herú is a wine of a deep ruby ​​red color. From the first moment, the fragrances of red fruits like strawberries and wild raspberries express the classic typicity of this noble variety. Subtly, notes of vanilla and spices intertwine with a delicate minerality, creating a charming and complex wine. On the palate, it unfolds intense fruit flavors and ripe, round tannins, integrated into its elegant structure and showing its long persistence on the finish. With its distinctive elegance, French oak frames the expressiveness of this wine. / Tara White Wine 1 is a fresh, vibrant, and mineral wine with a taut, well-structured palate, where the calcareous and saline soil is evident. Aromatically, it offers notes of cucumber, apricot, and flowers, which evolve in the glass as it is sipped. The varietal character is not reflected in a classic way, which we attribute to a very particular and unique terroir, provided by a climate influenced by the Pacific Ocean, with mornings clouded by the fog known as "Camanchaca," a strong wind that cools the vineyards and creates what we call a desert with a cool climate, yet very arid, with calcareous and saline soils.

Cask

Enclave: This wine was aged for 18 months in 225L French oak barrels with extra-fine grain. 50% of the barrels were new, and 50% were one year old. / Vértice: Aged for 22 months in 300L French oak barrels, 40% of which were new and the rest second and third use. It is then bottle-aged for a minimum of 14 months. / Obliqua: Aged for 22 months, 70% in one-use 300L French oak barrels with extra-fine grain and 30% in French oak foudres. And a minimum of 1 year of bottle aging. / Pangea: 100% of this wine was aged for 22 months in 300-liter extra-fine grain French oak barrels, allowing for extended aging. 50% of the barrels were new and 50% were used once. It was then bottle-aged for a minimum of 18 months. All components were stored separately and blended two weeks before bottling. Pangea is neither fined nor filtered, and natural sediment may develop in the bottle over time. / Herú: 100% of this wine was aged in French oak barrels for 14 months: 25% in new Burgundy barrels, 35% in second-use barrels, and 40% in third-use barrels. Capacity: 300 liters. Tara Chardonnay: This wine was aged for 24 months in 70% stainless steel tanks and 30% fifth-use 228-liter French oak Burgundy barrels. The aim was to obtain a wine that best reflects the character of the Atacama Desert. It was neither clarified nor filtered, so some sediment may be present. The wine is bottled with all its fine lees, which gives it a special and unique character.

Pairing

Enclave: Best served at 16-18°C. Pairs well with mature cheeses and grilled, well-seasoned red meats. Decanting 30 minutes before serving is recommended. / Vértice: A great accompaniment to spicy cuisine such as Indian, Thai, Mexican, Spanish, and other more complex dishes. Pairs well with semi-mature cheeses and strongly flavored meats like wild boar and venison. / Obliqua: This wine is suggested with roasted or grilled red meats, pork ribs, mature cheeses, and spicy cuisine, which goes very well with Carménère. / Pangea: Recommended to pair with grilled meats, lamb, and game. / Herú: Recommended to serve this wine at a temperature between 14-15°C. It pairs perfectly with oily fish, pasta, creams and mature cheeses./ Tara Chardonnay: Oysters, sea urchins, oily fish and white meats.
