The Cabernet Sauvignon, on the other hand, comes from our vineyard in San Bernardo in the Maipo Valley, with alluvial soils featuring a characteristic gravel horizon at depth. The climate is dry, cooled by breezes that circulate through the river valley. The grapes from both vineyards are hand-harvested in 10 kg crates. Vinification follows traditional Bordeaux methods. The Cabernet Sauvignon and Syrah varieties are vinified separately, as is their aging in French and American oak barrels, respectively, for 16 months.
